A New Batch of Cookies


Baking is therapy for me.
Cookies are so delectable with a cup of tea.



Finding new recipes is a challenge and one that is fun.
You know the ingredients and can make them healthy, not as sweet and fattening as a cinnamon bun.



The smell from the oven is worth the trouble and wait.
The problem is they don't last long, and soon will be ate.



Oatmeal Toffee Cookies was one of my recent finds.
It is hard to choose, there are so many kinds.



Whether they are fancy or plain, no matter to me.
They are wonderful to the taste buds; I think you will agree.



Oatmeal Toffee Cookies



1 cup (2 sticks) butter or margarine, softened
2 eggs
2 cups packed light brown sugar
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups quick-cooking oats
1 1/3 cups (8 oz. pkg.) Heath Bits 'O Brickle Toffee Bits
1 cup Mounds Sweetened Coconut Flakes (optional)



Heat oven to 375 degrees, lightly grease cookie sheet or use baking parchment. Beat butter, eggs, brown sugar and vanilla in large bowl until well blended. Add flour, baking soda, cinnamon and salt; beat until blended. Stir in oats, toffee bits and coconut, if desired, with spoon.

Drop dough by rounded teaspoons about 2 inches apart onto prepared sheet. Bake 8 to 10 minutes or until edges are lightly browned. Cool 1 minute, remove to wire rack. Cool Completely. About 4 dozen cookies.

Fresh Batch


While the cat is chasing Wookies,
The mouse stayed home to bake some cookies.
She used a recipe for Gingerbread men,
Made a batch of Ginger bread mice then.


In them she put a pinch of catnip.
With eyes made from a chocolate chip.
She keeps her skills very well honed,
That way the cat will stay quite stoned!
